The brand

The name of the brand refers to the dark skin of Capa Negra Iberico pig, an animal distinguished by its slender legs and black trotters. The tone of its skin, its black cape, is an unmistakable symbol of the Iberico breed; Similarly unmistakable is the flavour of its products, as a result of the tradition and climate of Jabugo.

It is a category of foods with exceptional gastronomic feature: Iberico hams and sausages of the highest quality. The quality of these products contains infinite surprises and incredible sensations.

Our products

The Capa Negra hams and shoulders come in 3 varieties, depending on the feeding of the pork:

  • • Acorn-fed: Ham or Shoulder from the Iberico pig fed exclusively on acorns and grass. This feed, rich in glycides and fats, in combination with plenty of exercise for the pig roaming free, aids the formation of its muscles with the perfect proportion of meat and the fat necessary to produce the characteristic marbling, which distinguishes the organoleptic quality of the meat.
  • • Natural grain-fed: Grain-fed Iberico Ham or Shoulder from pigs fed in freedom principally on grass and cereals.
  • • Grain-fed: Grain-fed Iberico Ham or Shoulder from pigs fed principally on grass and cereals.

Sausages

Available whole and in slices. All of the Capa Negra sausages are manufactured in accordance with our tradition and are cured in the natural drying rooms of Consorcio de Jabugo.

  • • Bellota 100% iberico pork cured loin: From the Iberico pig, extensively farmed in the oak forests of the Iberian Peninsula and fed primarily on acorns, the pork loin is prepared with a salted and marinated strip of Iberico pork loin.
  • • Acorn-fed Iberico Cured Shoulder Loin: Prepared with Iberico Presa (shoulder loin), marinated and cased. It is characterised by its dark colour and its marbling, a little bit less than pork loin.
  • • Acorn-fed Iberico Loin Chorizo: Once the best lean pork trimmings have been selected (presa 75% and head of loin 25%), the mixture is chopped by hand, using a knife. Once this has been done, it is marinated and then cased in natural casings.
  • • Acorn-fed Iberico Salchichón: Lean trimmings of ham, shoulder and top loin from Iberico acorn-fed meats, seasoned with salt, ground pepper and whole peppercorns, grated nutmeg, cloves and other spices. Incomparable flavour
  • • Natural-cased Iberico Salchichón: Prepared with Iberico lean pork trimmings and fats chopped very finely, to which natural spices and whole black peppercorns are added.
  • • Natural-cased Iberico chorizo: Prepared with extra lean pork trimmings and fat-marbled meats, from the Iberico pig. Seasoned with selected spices (paprika).
